The low acid coffee market has grown significantly as more consumers connect high-acid coffee to acid reflux, GERD, and GI discomfort — but most brands have responded with marketing claims rather than genuine chemistry. This guide gives you a simple, science-based framework for evaluating whether a low acid coffee claim is real, or just a label.

The Four-Question Test
Before buying any coffee marketed as "low acid," ask these four questions:
Question 1: Is there a published pH number?
Not "gentle" or "smooth" or "easy on your stomach" — an actual pH number from an independent laboratory. pH is a precise measurement. Any brand that genuinely achieves low-acid results will publish the number. If there is no number, there is no proof.
Question 2: Was it tested by an independent university?
Brand-funded studies are not independent verification. The gold standard is peer-reviewed research published by an academic institution with no financial relationship to the brand. UC Davis tested Puroast. NC A&T tested the top 10 low-acid brands. These are independent. A brand's own lab results are not.
Question 3: Is it LACCSA certified?
LACCSA — the Low Acid Coffee Certification and Standards Authority — is the only independent certification body for low-acid coffee claims. LACCSA certification requires verified pH testing, roasting process review, and ongoing compliance. Puroast is LACCSA certified. No other major brand is.
Question 4: Does the brand have a patent on the roasting process?
Puroast holds the only US patent on a low-acid coffee roasting process. A patent requires the USPTO to independently verify that the process is novel, non-obvious, and technically sound. No patent = no verified process. This is why competing brands cannot replicate Puroast's pH 5.8 at scale — the roasting chemistry is patented.
Why pH Is the Right Measurement
Some brands market "low acid" coffee based on a different claim: that their beans or processing method reduces "irritating compounds." This is a deliberately vague claim that avoids the only measurement that matters — pH.
pH is a logarithmic scale measuring hydrogen ion concentration. The lower the pH, the more acidic. Standard coffee measures pH 4.5–5.0. Puroast measures pH 5.8. On the logarithmic scale, each 1.0 unit change represents a 10× difference in acidity. The gap between pH 4.8 and 5.8 is approximately 10× less acidity — or roughly 70% less in practical terms.
Research from the Journal of Agricultural and Food Chemistry explains the roasting chemistry behind this difference. During Stage 1 roasting, chlorogenic acids break down into quinic and caffeic acids, dropping pH to approximately 5.0. During Stage 2 roasting — which only Puroast's process consistently reaches — quinic acids further convert into phenolic antioxidants, raising pH back to 5.7–5.9. Flash roasting stops before Stage 2, leaving coffee at pH ~5.0 regardless of what the label says.

What pH should a truly low acid coffee be?
