During pyrolysis, chlorogenic acids in the green coffee bean break down into quinic acids — the bitter, acidic compounds responsible for coffee's typical pH of 4.8–5.0. Mushroom extracts are added to the coffee after roasting — as a powder or concentrated extract mixed into the finished grounds or instant coffee base. This post-roast addition has no mechanism by which it could reverse the quinic acid formation that occurred during pyrolysis. The pH of the coffee base is already set. Adding lion's mane, chaga, or reishi to pH 4.9 coffee produces pH 4.9 coffee with mushroom powder in it.
