Yirgacheffe
The most celebrated Ethiopian origin. Yirgacheffe coffees are grown at 6,000–7,200 feet in the Gedeo Zone of the Southern Nations region. They are famous for their extraordinary floral aromatics — jasmine, bergamot, honeysuckle — and bright fruit notes including lemon, lime, and peach. Sidama

Harrar
In the eastern highlands, Harrar produces distinctive natural-process coffees with wild, fruity, wine-like character — blueberry, dried mango, mocha. The dry-process fermentation creates complex fermentation notes that are polarizing but beloved by enthusiasts.
Guji

Limu
A washed-process origin producing balanced, wine-like coffees with good body and fruit complexity. Less extreme than Yirgacheffe but more accessible for everyday brewing.
The same high-altitude conditions that produce Ethiopian coffee's extraordinary flavor complexity also accumulate high concentrations of malic, citric, and phosphoric acids during slow cherry development. Ethiopian Coffee Processing Methods
Washed (Wet Process)
The coffee cherry skin and fruit pulp are removed immediately after harvesting. The beans are fermented briefly in water to remove remaining mucilage, then thoroughly washed and dried on raised beds. Washed coffees produce the clearest, most terroir-expressive flavor profiles — the florals and fruit notes of Yirgacheffe come through most intensely in washed processing.
Natural (Dry Process)
The whole coffee cherry is dried on raised beds with the fruit intact for 4–6 weeks. As the cherry dehydrates, sugars and fruit compounds absorb into the bean. Natural-process coffees develop intensely fruity, wine-like, sometimes fermented flavor profiles — blueberry, strawberry, tropical fruit. Harrar and some Guji coffees use natural processing.
Honey Process
A middle ground between washed and natural — the skin is removed but varying amounts of fruit mucilage are left on the bean during drying. Yellow honey (minimal mucilage) produces clean, subtle sweetness. Red honey (more mucilage) develops more fruit character. Black honey (most mucilage) approaches natural-process intensity.

The Ethiopian Coffee Ceremony
The Ethiopian coffee ceremony — buna — is one of the most elaborate and socially significant coffee traditions in the world. Green coffee beans are roasted on a flat pan over charcoal by the host, ground by hand in a wooden mortar and pestle, and brewed in a clay pot called a jebena. The ceremony involves three successive rounds of coffee — abol, tona, and baraka — each slightly weaker than the last, shared among guests over conversation.
