Ask any barista or specialty coffee enthusiast: Arabica is better. Arabica wins on flavor, aroma, and complexity. Robusta is cheaper, more caffeinated, and useful for espresso crema. The debate has been settled in specialty coffee circles for decades. But here is the bigger question almost nobody asks: does bean species determine acidity? Does choosing Arabica protect you from acid reflux? The answer is no — and millions of acid-sensitive coffee drinkers are making choices that do not actually help their gut because of this misunderstanding.
What Is Arabica Coffee?
Coffea arabica is the dominant commercial coffee species, accounting for approximately 60% of global production. Arabica originated in the highlands of Ethiopia and Yemen. Today it is grown throughout the coffee belt at altitudes between 1,800 and 6,300 feet above sea level. Arabica is prized for its flavor complexity — ranging from fruity and floral to chocolatey and nutty depending on origin, processing, and roasting. Caffeine content: 1.2–1.5% by dry weight.
What Is Robusta Coffee?
Coffea canephora var. robusta accounts for approximately 40% of global production. It grows at lower elevations, tolerates heat and disease better than Arabica, and produces higher yields. Primarily grown in Vietnam, Indonesia, Uganda, and West Africa. Robusta is bolder, harsher, and less aromatic than Arabica. Its higher caffeine content (2.2–2.7%) and emulsifiable lipid content make it useful in espresso blends for crema and intensity.
Many coffee brands market their Arabica beans as naturally lower in acid. This is misleading. Both Arabica and Robusta produce coffee at pH 4.7–5.0 under standard commercial roasting. Bean species affects flavor profile only. Roasting chemistry determines pH. Switching from Robusta to Arabica will not meaningfully help acid reflux.

Why Roasting Chemistry Matters More Than Bean Species
Coffee acidity is primarily determined by roasting chemistry — the process that degrades or preserves organic acids formed during the Maillard reaction. Standard industrial roasting at 450–480°F for 8–12 minutes retains most chlorogenic acids, quinic acids, and volatile acids. Both Arabica and Robusta emerge from this process at pH 4.7–5.0.
