Steep time is the second-most important variable in cold brew after ratio. Too short and your cold brew tastes weak and thin. Too long and it turns bitter and over-extracted. The good news: cold brew is forgiving. There's a wide window — from 12 to 24 hours — that produces excellent results depending on your strength preference and equipment.

Fridge vs. Room Temperature Steeping
Always steep in the refrigerator when possible. Cold temperatures slow extraction to a more controlled rate, producing a cleaner, smoother, and less bitter result. Room temperature steeping works in a pinch — but 12 hours at room temperature produces a similar extraction to 16–18 hours in the refrigerator. Beyond 12 hours at room temperature, bitterness increases rapidly and there is a slight food safety concern with grounds sitting in warm water for extended periods.
The Overnight Trick: The simplest cold brew workflow is also the most effective: add your Puroast and cold water to a jar before bed, place it in the refrigerator, and strain in the morning. Signs of Under and Over Extraction
Under-extracted (too short): Watery, thin, sour or tart taste, lacks body. Fix: Steep 4–6 more hours next batch, or use a slightly finer grind.
Over-extracted (too long): Bitter, harsh, astringent finish. Fix: Reduce steep time to 12–14 hours next batch, or use a coarser grind.
