WHY DARK ROAST K-CUPS ARE STILL HIGH ACID
Every K-Cup brand — Starbucks, Dunkin', Green Mountain, Death Wish, Folgers, Eight O'Clock — uses the same fundamental roasting process: industrial flash roasting in high-heat drum roasters for 10–15 minutes. Research from Shibamoto et al. (2009) at UC Davis confirmed that this process does not meaningfully reduce quinic acid concentration regardless of roast level. Dark roast K-Cups sit at approximately pH 5.0 — the same as light roast K-Cups from the same brand.
The convenient pod format changes nothing about the chemistry. Industrial roasting goes in. High-acid coffee comes out. The pod is just the delivery mechanism.
⚠️ The K-Cup Acid Problem: NC A&T University tested seven commercially available coffees marketed as low acid. Six of the seven were statistically indistinguishable from standard commercial coffee.
