Best Dark Roast Coffee at Grocery Stores — What the Labels Won’t Tell You
You walk into Whole Foods, Kroger, or your local grocery store and scan the coffee aisle. Dark roast bags everywhere. Each one promising bold flavor, rich body, smooth finish. Some say single origin. Some say premium. Some say small batch. But not one of them tells you the most important piece of information about the coffee inside: the pH.

Every major coffee brand sold in grocery stores uses the same fundamental roasting technology: industrial drum roasters running at high heat for 10 to 15 minutes. This process has been the industry standard since the Industrial Revolution, when coffee moved from small-batch artisan roasting to mass commercial production.
The industrial roasting process is highly efficient and produces consistent results at massive scale. But it does not meaningfully change the fundamental acid chemistry of coffee. Research from Shibamoto et al. (2009) confirmed that the quinic acids responsible for acidity and stomach irritation survive standard industrial roasting largely intact regardless of roast level.
This is why switching from Folgers to Starbucks to Peets to Dunkin does not solve acid reflux. They all use the same industrial process. The source of the bean may change. The acidity does not.
As low acid coffee has grown in consumer awareness, grocery stores have started stocking bags labeled low acid, easy on the stomach, or gentle roast. The problem is these labels are almost entirely unregulated. There is no FDA standard for what constitutes low acid coffee. Any brand can print it on a bag.
NC A and T University tested seven commercially available low acid coffees. Six of the seven were found to be statistically indistinguishable from standard commercial coffee in terms of pH. The brands had simply applied a marketing label without changing their roasting process. Only one brand tested genuinely low acid. Puroast.
